Lubiyeh bi Zeit

A traditional Lebanese mezze served cold along with hummus, and baba ganoush. What I love about this dish is how simple and easy it is, to put together. Served cold or warm this is your vegan friend’s favorite side dish. Lubiyeh bi Zeit means green beans in oil which is basically what this dish is. A confit of greens beans with tomatoes and caramelized onions.

With its festive colors, red and green this dish adds a pop of color for any cheese board, or pairs well with white fish, or grilled steak. Serve it warm or cold it won’t disappoint your vegan and meat-eater friends :)

Total Time: 45 minutes
Makes: 6-8 servings

INGREDIENTS:

  • 1/3 cup extra virgin olive oil

  • 2-3 onions, sliced

  • 3-4 garlic cloves, sliced

  • 1 can diced tomato, 14.5 oz

  • 2lb green beans, trimmed

  • Salt to taste

  • Slivered almonds to garnish

INSTRUCTIONS:

  1. In a large pot, heat extra virgin olive oil, on high.

  2. Sautée the onion for 8-10 minutes until translucent and start to brown.

  3. Add garlic and sautée for another 5-8 minutes on medium.

  4. Pour the can of diced tomato, with an additional 1/4 cup of water. I suggest washing out the can of tomato with the water. Season with salt

  5. Cook for 15 minutes, then add the trimmed green beans. Cook for 7-8 minutes or until the green beans are tender with a slight crunch.

  6. Taste and adjust seasoning.

  7. Serve warm and garnish with slivered almonds, or jar the green beans and serve cold for an appetizer or as a side dish.
