Pesto White Bean Dip

Green, easy, delicious, vegan these are the four words to describe this creamy white bean dip. Start off by making a vegan pesto base then add your white bean and you’ve got yourself this festive white bean dip!

Total Time: 15 minutes
Makes: 6 servings

INGREDIENTS:

  • 1 bunch basil

  • 2 garlic cloves

  • 1 lemon, juice and zest

  • 1/2 cup walnuts or pumpkin seeds

  • 3 tbsp extra virgin olive oil

  • 2 cans white cannellini beans

  • salt to taste

INSTRUCTIONS:

  1. Add all the ingredients into a food processor. Pulse until smooth, and fully combined. Make sure to scrape the sides of the food processor.

  2. Adjust the consistency by adding ice water. Season with salt. Serve the dip with crudités and pita.
